Job Details

Ensure the smooth running of the food and beverage offering/department for all Hotel outlets. You will have the responsibility to develop, innovate and deliver a product mix which is quality driven whilst maintaining aggressive financial returns. This will be driven by ensuring that all working methods are reviewed and best practice is achieved so we in turn can grow our business whilst delivering excellent guest service.

 

Duties and Responsibilities:

  • Ensure correct stock levels are available from central distribution area, to assist the operational Food and Beverage team for both The Capital Zimbali and The Capital Pearls.
  • Ensure strict compliance with all relevant Hygiene and Safety legislation and requirements
  • Champion a training culture within the Food and Beverage team to ensure succession planning, and a culture that exceeds the very best the industry has to offer
  • Constantly review the product range to ensure that all key quality standards are maintained
  • Participate in the food development panel that sits to drive the food offer across the Group (where applicable)
  • Responsible for maintaining and helping enforce the agreed brand standards for each unit by conducting and managing monthly audits
  • Maintain the F&B Management invoices and journals, manage and monitor expenditure associated with catering equipment, manage the asset register and assist in budget setting each year for the department
  • Operate within efficient labour budgets for each season, tracking labour spending and providing input regarding capital projects and initiatives
  • Assist in the planning and implementation of new ideas and menu specifications (when required), working closely with Central Support to ensure they fit with guidelines
  • Consistently review products delivered to ensure quality and take up any shortcomings with suppliers
  • Conversant in the latest trends in food nutrition in accordance with target audience
  • Provide constant leadership, mentorship, training and development to the team
  • Discipline of personnel when required
  • Responsible for staff rostering
  • Be aware of what the budgeted food and beverage sales figures for the month are and actively work at achieving these budgets
  • Control of all F&B crockery, cutlery, glassware, linen and equipment
  • Actively participate, supervisor and manage the 10, 20 and 30-day stock takes
  • Complete Function sheets accurately and timeously
  • Complete F&B forecasts and budgets
  • Calculation and control of Food and Beverage Cost Percentages
  • Ensure proper cash management and cash up procedures are followed by all F&B staff as per Company Policy
  • Ensure waste is controlled and properly recorded
  • Ensure that Bar requisitions are completed as per Company Policy
  • Ensure purchasing procedures are followed as per Company Policy
  • Ensure that relevant meetings are held with F&B staff as per Company Policy
  • Preparation of Sales Promotions & Mailings, working closely with the GM and the Marketing Department
  • Ensure a high and consistent level of guest satisfaction and deal with queries/complaints in a timeous fashion
